I don't think that any of those signs are essential. Some of the signs we already have commands for and some of the other ones like changing the time and the weather do not have a place in a PvP server in my opinion.
The only interesting part I see is the ability to buy/sell/trade with your signs. This however provides its own set of problems. The server would need to set up a shop area where things couldn't be destroyed seeing as how I doubt people would but a shop that would be TNTed in a matter of minutes. This also mean the mods would need to physically set permissions for each player wanting a shop in a new area.
With everyone wanting their own shop I can see having to set restrictions on who can own shops. For example, a power level, donating or some other means of filtering out potential shop owners.
I like the idea of having personal shops but it more labor intensive than just installing the mod and kicking back I'm afraid.

take note also that there are many many items that are not sold/bought @ spawn that people want to sell and, someone could possibly make a peaceful faction thats protected and put some signs in there. or a small marketplace for donators to sell their stuff in certian places. also, they might not be 'essential' but the're from the essentials plugin and could make the server more interesting.

Not really fond of the idea due to the fact that there isn't much that can't be obtained through the spawn shop. Anything that can't be obtained either has an easy alternative, such as flowers, or aren't sold to provide at least some reason to challenge yourself, such as blaze rods. Not to mention these shops would only be used to sell items at a cheaper price than the spawn shop, and money is already easy enough to obtain.
Another reason I really dislike this idea is that having a nice, simplistic spawn is something I find to be a boon to the server. Logging in and seeing a giant pink wool covered building begging for you to shop there is less than appealing when it doesn't match the spawn's motif.
Finally, Essentials mod does not allow for player run shops. You are thinking of iConomy's system(The signs look terrible in my opinion) or any other plugin that might have been built around that idea. Essentials signs don't pull from a pool of collected items, they just spawn new items in exchange for money.
I just don't see much use to any of these possibilities either due to them already having a command to control them, or being unnecessary for the server.

if you look at the video in the link, the buy/sell/trade signs made by players are player-run-shops that you deposit items into to sell for the price you put and, the signs also hold money for the player to pickup at the end of the day to see the growth per-sign.

Still seems unnecessary. What would be sold that isn't already sold at the spawn?

I know this isn't the point....but I am pretty sure they sell discs at the spawn.

Other items you might list aren't sold probably due to their easily farmable nature through items sold in spawn as well, such as flowers and grass(Used to punch to gain seeds to farm wheat.) Also, who is making shops to sell this miscellaneous garbage anyways?

I know this isn't the point....but I am pretty sure they sell discs at the spawn. They do. They sell all the discs. What they don't sell though, are usually 'pointless' items. Things like clocks, which are not very useful to be honest. Rails however, are not sold...but the items to build them are. This is to prevent exploits of the buying/selling system, which would lead to 'infinite' cash. Player owned shops would be impossible to do technically. That would require the server using up a lot of memory, to remember what items people are selling, and for how much, and all that interaction.

Besides the point, isn't it a moot point to build a shop on your terrain in a griefing server?
